The Perfect Peanut Butter Cookies
A peanut butter lover’s dream cookie
There’s so much to love about these perfect peanut butter cookies. They are super simple and only require one bowl & just seven ingredients. They are anything but dry (which I know can be a challenge when working with PB!) and have the softest, chewiest centers. I also think it’s worth adding that these make the most heavenly ice cream sandwiches that you can imagine. These are a must try for peanut butter lovers!
Ingredients:
1 Cup Natural Peanut Butter
1 Cup White Granulated Sugar
4 TBSP. Melted Salted Butter (half a stick)
6 TBSP. 2% Milk
2 TSP. Vanilla Extract
1 Cup All Purpose Flour
1 TSP. Baking Soda
Directions:
Preheat oven to 350 Degrees Fahrenheit.
Prepare wet ingredients in an electric mixer or large mixing bowl— To start, combine peanut butter, sugar, and melted butter until creamy. Then add milk and vanilla until well combined.
In the same mixing bowl, add flour and baking soda until well combined.
Create 2 inch balls by hand or with an ice cream scoop. Roll in the palm of your hand to form dough evenly. Dough may need to be worked around & packed together a bit in your hand. Before placing on your baking tray, pat the ball down slightly to create a just barely flattened ball (about 2 centimeter thickness).
After forming each flattened ball, stamp the tops (crisscross) using a fork.
Place tray on middle rack of oven and bake for 10 minutes. The tops and edges of your cookies should look like they are just beginning to golden.
Remove from oven and let sit for 2-3 minutes before transferring to a cooling rack.

Helpful Notes:
In this recipe, I use Kirkland Signature Organic Peanut Butter—containing just dry roasted organic peanuts & salt. Be sure to mix your peanut butter thoroughly before use to ensure that the oils are evenly distributed. We need these oils to help create a chewy & tender cookie!
I find that baking one sheet of cookies at a time on the middle rack best ensures that my cookies bake through evenly and without scorched bottoms. This depends entirely on the performance of your oven— get to know your oven and what positions work best for trays and pans. This can make all the difference in the way that your baked items cook through.
