Buttery Silver Dollar Pancakes
Perfectly sized, buttery hot cakes
These silver dollars were created for those that love buttery, diner style pancakes. They are lightly sweetened with maple syrup (so they contain no refined sugar), and are especially buttery, so there is no need to grease or oil your pan before use. We love to top these with local honey, syrup, fresh fruit, whipped cream… the list goes on!
Ingredients:
1 & 1/2 Cup All Purpose Flour
3 & 1/2 TSP. Baking Powder
3/4 TSP. Salt
1 Egg
1 & 1/2 Cup 2% Milk
2 TBSP. Maple Syrup
1 & 1/2 TSP. Vanilla Extract
1/2 Cup Salted Butter (1 Stick, Melted)
Directions:
Prepare dry ingredients in a large mixing bowl— Combine flour, baking powder, and salt with a whisk until well combined.
In a small bowl, melt butter and set aside.
In a medium sized bowl, whisk your egg for about 10 seconds. Add milk, maple syrup, and vanilla. Mix until well combined.
Quickly whisk your butter into the milk mixture.
Fully combine wet ingredients into the dry. Small flour clumps may remain— this is okay!
Begin heating your pan or large skillet on medium heat. Using a 1/4 measuring cup, scoop batter to pan & let each side cook for about 1 & 1/2 minutes.

Helpful Notes:
In this recipe, I use Kirkland Organic Maple Syrup, containing no added sweeteners.
My stovetop is a gas range, and I’ve found that the best setting to heat these on is around a 4 (medium to low heat), for 1 & 1/2 minutes on each side. It may take a few trials to find the sweet spot for temperature & time on your specific stovetop or skillet. Feel free to set a timer in between flips.
